C.I.Y: Leftover Omelette #nomnom

I'm always bombarded with leftovers..always, so what a better way to get rid of it than by recycling! I've always done this and throughout the years have created some reallly gooood stuff out of mixing and matching leftovers and eggs. My mom made an amazing roast beef and there it was in the fridge so I decided to make an omelette and actually recorded it!

 Here's what I used:
 -roast beef
-chili flakes
-ground rosemary, italian spice mix c/o bulkbarn
-2 eggs
-sea salt, pepper
-one clove of garlic and red onions
-spinach
-cherry tomatoes

Last nights dinner

kitchen video from geri coria on Vimeo.

Last night I was feeling pretty crafty and made a kitchen video. I've been cooking alot lately nothing challenging just the simple stuff like fish, salads, rice, etc, etc. But yesterday I felt pretty good cause I just got my hair did and after a shitty unmotivational week it was a personal reward..sort of anyways here are some pics. I posted the insalata caprese salad recipe way back in October it was my first post on eduplate, and the recipe for the salmon is pretty simple its white wine, and herbs of your personal preference. Onto the pics

Kitchen VIDEO: chicken enchiladas with chile verde

I was browsing around the internet and I happen to stumble upon a verry cool cooking video
on a very cool blog (blushingambition). Cooking videos are pretty cool cause it shows you how to do a step by step process of how to make the dish...sort of.

Tofu sizzle

Tofu 1-2-3
This recipe requires lots and lots of patience depending on how
golden you want your tofu. So I had a brick package of tofu that
I needed to cook before the due date (Nov23) and there
are soo many tofu dishes out there, but very little ingredients
on me so I decided to just fry it and eat crispy yummy tofu.
Here is what your going to need:

-parsley
-kosher salt
-five cloves of garlic
-half an onion
-lemon pepper

Step One:

slice your ingredients into tiny pieces, take the tofu and cut it how ever you want.
Preferably in cubes

Step Two:
pre heat the pan and pour olive oil, carefully place tofu in the
pan and add garlic after 2 mins then the onion, sizzle till golden,
once golden add kosher salt, lemon pepper and parsley
Step Three:

EAT!!!!!
